I purchased a light blue Francis Francis X5. I did have to play with it to get good crema, and emailed their tech support for advice…what helped was letting the machine warm up and leaving the porta filter handle empty.

Thank you for contacting us in regards to your espresso machine. To develop a thicker crema when making espresso, there are several steps that need to be taken before the actual preparation:

1) Machine needs to be pre-heated for at least 20-30 minutes prior to making shot.

- Turn on power,

- Run a 1/2 ounce blank shot through brew head to ensure that boiler is full, then let machine warm up.

- Make sure that you have any empty porta filter handle in the group head.

2) Using freshly ground coffee is essential. Make sure that coarseness level is correct as well.

- Use 7 grams for single

- Use 14 grams for a double shot.

3) When machine is ready, run the coffee switch to let hot water pass through empty handle. Then place coffee in basket. Give it a firm tamp with the tamper provided and place into group head.

4) Run coffee switch. Extraction time should be 18-24 seconds.
